Requirements for setting up a meat based business

I already am a registered auto entrepreneur artisan for providing a service (cleaning equestrian material) and am considering another business opportunity.

I would like to start another auto entrepreneur business making allergy friendly sausages and burgers in the Dordogne.
This idea stemms from the need to source gluten, egg, soya and milk protein free food for one of my children, which seems challenging.

I would purchase the ingredients like meat, spices, packaging,...and make the product at my home. Selling would be arranged either by collection from my home or delivery to customers.

What exactly do I need to do in terms of additional business registration and potential hygiene requirements if any, please?
Also, is there anything else important I need to think about?
