Number of clients necessary for a registered company in France?

How many clients do I need as a micro-entrepreneur or if I set up a SARL or other company here in France? Will two suffice for example? Would this only become a problem if my accounts were audited, or could it become a problem as I make my quarterly declarations?
I now understand that with only one client I would be liable to have to pay social charges for myself and on behalf of my employer as I would be treated as an employee. This seems to penalise people like me who have only one main client who happens to be foreign and therefore does not pay into the French social security system.
