How do we set up a chambres d’hotes in France?

My husband and I are due to set up a chambres d’hotes and salon de the in France, opening around June and August respectively. We have received lots of advice on how to set up to the businesses to make the best of the tax system and to enable us to work together.
Lots of the advice we have received from accountants, business advisors and local auto-entrepreneurs in France is conflicting and we need to cut through all of this, to understand the best route for us and for your help to then set us up.
We will also need to know the licenses, rules and regulations and all else we need to set up the businesses. We want to make sure we do it all properly but being careful to make the best financial decisions for us.
