Would my business be classed as a chambre d’hote in France?

I am intending to set up a catered chalet business in the France (3 valleys) next winter offering bed, breakfast and evening meals to guests (maximum of 8) staying for a minimum of 4 nights, I will not have a set changeover day.

Would this business be classed as a chambre d’hote with table d’hote?
I understand that I would need to attend the permis exploitation, would I also need to attend a hygiene alimentaire course? Are there any other certificates I would need?
Am I right in thinking that I would need to register at the Mairie to obtain permission to open?
Is there anywhere else that I need to register, a friend told me that I would need to get a license from Les Douanes in Albertville?
