What’s the best way to register a fast food restaurant business in France?

I am looking to open up a fast food restaurant, employing 2 or 3 people to begin with. I am at the very early stages; doing research and building my business plan. My questions are:

Is there an entity which only charges tax and socials after expenses i.e. net profit?.
If so, are employee salaries counts as expenses?
If so, is there a certain level of net profit before I have to pay tax and what is that; and the same for social charges?
If I don’t pay myself a salary or dividends and put money back in to the business, do I attract any taxes or social charges?
If this has not already been answered in Q4. What is the minimum social charges to keep all my French benefits i.e. pension, unemployment benefit, medical or is there not such a thing or a completely different subject?
