What type of business to set up in France for cycling holidays?

I am in the early stages of looking into starting a business in the French Alps. The business model would be effectively chambre d’hotes for cyclists and providing supported cycling days/transport. I am not sure what the most appropriate business type would be, I would welcome any suggestions.
