What is the best legal and tax structure for a garden designer?

I was a practicing garden designer in England and now have my first client here in France. I have no idea what business and tax structure I need. I charge an initial small design fee and mark up any plants, materials and builders etc. that I buy in to complete the garden -  which is really where I make most of the profit. A friend advises me not to go for an auto-entrepreneur option because I would be taxed on the turnover?

The second part of the question is that I grow topiary plants on our land and sell them from our farmyard only. I am registered at the chambre d’agriculture for this and the area of land that I cultivate it too small to need to pay a forfait agricole. However, I plan to use some of these plants in the gardens I design - would it help me legally/financially if the two things were linked?
