What is the best business structure to open a retail shop in France?

My partner and I want to open a small children’s clothing retail shop business in rural France. We live about 20 minutes away from a good sized town and have found an empty shop asking 300 euros a month. It needs a little work but nothing too extensive. We are both British citizens and have been living in France in a house we own for the past 6 months. We expect to offer a local, with stronger french than ours, part time work to help us get up to speed with the customers and dealing with Mairie, etc. We forecast an annual turnover of 40,000 euros, so its not a big business. What legal structure/business registration do you recommend we set up?
