What’s the best business set up for chambres d’hotes in France?

We are starting a five bedroom chambres d’hôtes business (bed and breakfast) in France next spring and would like your advice on the best way to set up, i.e. auto-entrepreneur etc. We do not expect a turnover to be more than around 30,000 euros, although the venture will include specialist residential holidays in art and craft, so may exceed this in a few years.
