What exchange rate to use from UK pounds sterling to euro?

We are paid in UK pounds sterling for our auto-entrepreneur business and transfer money to France as and when we need it. For the purpose of declaring our income on the auto-entrepreneur system, can you tell us how we work out the exchange rate to use each quarter?
