Trading as a sole trader in Ireland and moving to France?

My wife and I currently have an online retail business in Ireland with a turnover of around 200,000 euros. We will be moving to France shortly and I’m wondering what the best thing to do is. The retail business sells mainly into the Irish market with some sales into France. Currently I’m operating as a Sole Trader in Ireland and my wife provides services to the business and this is quite tax efficient. Can we continue to operate as Irish sole traders while living in France, or do we instantly become liable to taxation under the French system as soon as we move?

Would it be advantageous to register a limited company in Ireland before moving to France. That way, we would have salaries from an Irish company. Would this make sense? Would be grateful for advice regarding what the best way of managing this transition is.
