Should I be invoicing clients individually?

My business is service based and offers weekly workshops in France. I have a regular group of clients who participate, and for the most part they each pay me in cash per session, occasionally by cheque. I keep a log myself of numbers of clients and what income I receive per session. Should I really be producing invoices per client per session as the amounts are very small? If not, am I legally obliged to record more than I’m doing at present?
