Selecting between employment and entrepreneurship?

I am looking for advice how to establish the employment with a SA business in France. The work is for a couple providing services for a maison including the cleaning, laundry, some food preparation and serving. Also the technical maintenance, maintaining the relations to 3rd party service providers and gardening are in the job description. In the future there will be a possibility to provide extra service and product sales, which we could invoice by ourselves. A flat in the house is included to the contract.

Being as an employee the salary would be just above the minimum salary, plus housing in the facility, but for my understanding the benefits would be better and more flexible for us than being entrepreneurs. Still, for the SA our employment brings the mandatory costs regarding the employees, where could I find a list of the responsibilities of those?

On the other hand, the salary income at least in the first years would fit in the auto-entrepreneur schema, which would allow us to to prepare the business for the future and already for the invoiceable tasks in the near future? Running auto-entrepreneur is merely straightforward and educative for the business in France.

Or would it be better to start another company structure than auto-entrepreneur, what is the next level possibility? What could be the minimum amount of the turnover for selecting other company form than auto-entrepreneur?
