New General Data Protection Regulation impact for French business - GDPR

I have a small business franchise of cycle hire centres. We collect some data from clients, phone numbers and emails for instance. With the deadline for the new GDPR regulations approaching, what policies should I have in place? For example, do I need a privacy policy on my website? Or should the centres have a written data protection plan?

Any advice would be welcome!
