Living in the UK with a gite business in France?

My friend and I are in the (hopefully) latter stages of buying a large house in the Limousin, which we plan to run as a Gite. We are both living and working full time in the UK. We have had advice about how we need to achieve this which seems incredibly complicated, I just wondered what you would advise? SCI has been suggested, but reading on forums perhaps SARL is best, or perhaps one comes before the other, perhaps I need a holiday or a new brain.
