Legal structure for sejours linguistiques?

I’m auto-entrepreneur status as a formatrice Anglaise teaching business English at local CCI, in addition also run a bed and breakfast. I’ve been receiving immersion students through an agent for 2 years and now want to be able to run my own immersion business independently for both adults and children alike.

Do I have to change my status from auto-entrepreneur to entreprise individuelle to combine both the teaching and bed and breakfast - If so, how do I do it?
What about receiving students under the age of 16, how do I get accredited?
Who do I register with in order to be listed with the Conseil Generale in the Midi Pyrennees?
