How much sales tax will I pay on a market stall?

At the end of last year, we bought a small house in Ceret. I live in Kenya and wanted to bring some craft items (also to help local communities here) to sell at the local market before Xmas. However, I have now been warned that I need to set up a business under the auto-entrepreneur scheme, get a license to trade at markets and then get public liability insurance. All seems a bit much to sell stuff probably once off. Can you tell me how much tax I would be expected to pay on my sales? It’s very difficult to get receipts as mostly I am buying bead work from the local masai community.

Can I apply for the business set up, get the license and insurance whilst I am not in the country (only arrive 1 day before the market)? Any idea what the repercussions would be if I did not have my paperwork and was caught? Would they just ask me to pack up and leave or could I be fined or otherwise punished if I pleaded ignorance? A friend told me that they rarely ask for paperwork in Ceret, but I am worried that I will stand out a mile as a newcomer who does not speak French.
