How do we start a touring business in France?

I am an English passport holder who currently resides in the United States with a green card, my wife is American. Four years ago we purchased a small chateau in Normandy and started the restoration process that is now complete. We are in the process of restoring the carriage house into three luxury apartments. Our business will be oriented towards the American traveler. We plan as follows”

Purchase of a small eight seater luxury van to pick up clients from Paris and bring them to Normandy for a week of touring
They will stay in the apartments and the price will be all inclusive and payable in US dollars
Maximum six people at any one time and the duration is for a week

Hundreds of questions but to start I am looking for some general direction

Can the business be setup in the US and pay taxes there or does it have to be setup in France?
Would I have to pay French taxes?
What type of insurance would be required in terms of vehicle and also in case of an accident at the apartments?
If the business is setup in France would I be better of using my trusted friend and caretaker as the owner of the business?
