How do we get access to health care in France?

We are a married couple moving to France later this summer and intend to operate part of our home as a gite. The income will be well within the limit and we will also have some rental income from our UK home. We are currently 58 and 57. We believe that the auto-entrepreneur option will be best for handling the gite business and will seek advice about whether or not to have a collaborating partner included in the application.

We anticipate receiving an S1 form by applying before the end of June 2014, but our understanding is that registration as an auto entrepreneur will give immediate access through this route rather than CPAM? Should we seek to join CPAM first or might this create confusion?
If one of us also engages in consultancy work from our home in France or we look to sell products in local markets, will this require a separate auto-entrepreneur registration?
