How do I register a gite business in France?

I retired from the UK Fire Services six years ago at the age of fifty, my wife and I are in the process of buying a house with two gites to rent out. As we are under retirement age which would be the best scheme for us, auto-entrepreneur, micro-bic or something else? Where and how and with who do I register for the gite business, residency of France, taxation, and social charges, and health?

My pension, which is a government pension and therefor taxed in the UK under the DTT is, and probably always will be more than we will earn from the gites - so is my pension my primary income, or is the gite earning the primary? If we registered under my wife’s name, would that alter things, as she has no other earnings.
