How do I apply and register to start a business from home in France

I want to start a small recycling business from home, just myself and my wife to start with. You had mentioned previously that this was one of the two types of auto-entrepreneur that you could not register for me. This appears to be because I must fill out certain forms personally, registration for a 5 day course for example. Can you explain what is involved and how I can get registered? I do understand I may have environmental compliance registrations etc. attached to this venture, that may or may not be separate issues.
