Category and best legal structure for clothing / dress designer?

I am a dress designer and living in France. I am in the process of starting my own label but am extremely confused and a little stressed about how to go about it the right way. I don’t speak French yet so it’s been even more difficult trying to find any help or advice. So I’m hoping you will be able to steer me in the right direction. Basically, I am having my designs made in Asia, I will then try to sell them to retailers, so my plan is to sell wholesale to begin with. I will approach retailers in March next year, so I don’t know at this stage if there are any who will actually take my label on. If they do, my income would be dependent on sales. If I had to guess I would say approx $20,000AUD in a year as I am starting out. I am estimating AUD because I am targeting Australian retailers first. Also start up costs will be high due to travel, importing/exporting, setting up and sampling etc.

I will be undertaking this business on my own, however, if needed my fiancé could be listed if there is a certain structure I would benefit more from. In terms of the structure, we will be purchasing our own home next year so would prefer one that offers some sort of protection on our personal assets.
