Cafe Associatif

I live in a large village house and together with some friends (2 at the moment but possibly more) we hope to turn the front of the house into a cafe with small creative workshops. I am a textile artist although have no formal qualifications and have already had permission for change of use to a gallery space and are now working on plans to amend this to include a cafe.
It has been suggested to us to start as a cafe associatif but from the information we can find it appears that we can’t make a profit from this and we do need all to earn a wage.
Do you have any knowledge on this or any suggestions on how we could work together in one space but possibly all be self employed?
