Best structure for selling holiday English courses?

Together with a companion I am in the midst of starting up a business where we sell holiday language courses to individuals and groups. Now I have gotten a little lost in the rules and regulations and hope you can help me with my handful of questions. The basic business setup goes like this. The client buys a full packet language course with us, we buy the accommodation, cultural activities etc. and take care of it all. The client only deals with us. My companion is already registered as an Auto-Entrepreneur, since she for a year or two have been teaching French to foreigners, and initially my plan was to also register as auto-entrepreneur. However since the expenses will take up a good part of my income, I guess I could, in the worst case scenario, end up paying more in tax and cotisation than I would have on my account.

Can you confirm that auto-entrepreneur or Micro-Enterprise is not for me? I think I should register as a Regime Réel, do you agree? Or would the EIRL be something to consider? What profession will I belong to? I guess it would be either Profession Liberale for the teaching, or Commercial for the selling of courses. If I set up as a Regime Réel, does it matter in any way that my boyfriend is also a business owner under the Regime Réel (In a totally different profession)?
